The iconic salad's creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States. Cardini lived in San Diego, but ran a restaurant in Tijuana to attract Americans who wanted a drink or two. His daughter, Rosa, said her father invented the salad at his Tijuana restaurant when a Fourth of July rush in 1924 depleted the kitchen's supplies. Caesar made do with what he had, adding dramatic flair with table-side tossing. My version is better.
