This evening, Leesa and I will dine on US$62.00 worth of Chilean Sea Bass done on the grill. This is, for my money, is the most flavorful swimmy stuff you can get out of the sea. The taste is rich, buttery and satisfying. Fish is, of course, the only food you complain about when it tastes like what it is. Usually to get it to taste like something else, you got to douse it with sauce or lemon or mustard, dress it in Bermuda shorts and pistol whip it for effect. But not our main dish tonight; it’s a triumph of marketing, too. Under the original name, they couldn’t give it away, but in 1977, a fish wholesaler got creative and solved the problem. Prices have skyrocketed ever since. Here’s what happened.
